Ingredients

180g mixed dried fruit
125g chopped glace cherries
30g chopped stem ginger
60ml brandy (omit for child friendly version)
1 litre vanilla ice-cream
155ml double cream
125g flaked almonds, toasted
60g chocolate chips (milk, white or mixed)
Cocoa powder for dusting.

Serves 10-12

Mix dried fruits with brandy, cover with plastic wrap and allow to soak for several hours.
Soften ice-cream and place in a bowl with cream. Stir in the fruits, almonds and chocolate chips.
Spoon into a 1.75 litre (3 pint) pudding basin and cover with freezer wrap. Freeze overnight.
Remove freezer wrap and immerse basin in hot – not boiling water for a few seconds to loosen.
Invert pudding basin onto a chilled serving plate and decorate with a dusting of cocoa powder.

Additional decoration:
Make holly leaves and berries from green and red fondant icing or marzipan and arrange on top.

Variation: Change vanilla ice cream for chocolate and create a dark pudding, dust with icing sugar to create a snowy effect.
Place ice cream mixture into small basins for individual desserts.

This makes an ideal dessert on a hot Christmas day.
It’s so easy to make, requires very little effort and can be made in advance leaving you with time to enjoy the festivities.

What better time of year than now to start planning a party – summer is just around the corner with Christmas following close behind.

So why throw a party? the list of reasons is long: it could be to celebrate a special occasion, maybe a birthday or housewarming, christening or retirement, or simply to catch up with friends and family.

Whether it be large or small, elaborate or simple, a party brings people together, often family and friends, sometimes strangers, but all with one goal, to enjoy themselves, share happy times and create memories.

There are endless styles and themes of parties and no two are ever the same. Regardless of your budget, with careful planning and choosing the right setting, food and decor you can create an occasion which is fun, relaxed and leaving your guests talking about it for years to come.

For some people, even the thought of throwing a party can be overwhelming, but help is at hand. By enlisting the services of a party planner a lot of time and effort can be avoided. Most of the research has been done and contacts already sourced just leaving you with the decision of what to wear.

Concierge; a person in a hotel employed to assist guests.

The word concierge is of French origin and is probably derived from the latin word Conservus which means ‘fellow slave’. Another possible source is the French term Comte des Cierges, keeper of the candles, who tended to nobles visiting castles in medieval times.

In these modern times I like to think of the personal concierge as one who attends to the wishes of clients.

What is a Personal concierge? What do they do?

Ask any Personal Concierge to describe their job description and the answer won’t be a short one.

They possess qualities and attributes to be able to complete your requests leaving you to enjoy more free time and live an organised stress free life.

A personal concierge leaves their client feeling like the most important person in the world. Nothing is too much trouble and they will do everything in their power to carry out a request and achieve results.

The requests from clients are wide and varied, it could be anything from picking up grocery shopping to arranging a family holiday and managing the home whilst away.

No two days are ever the same.
